There are
dozens of diets, each supported by clinical trials, animal studies, and
theory. However, some clear evidence has
emerged as to the good and bad of the western diet. Before going on with recommendations,
the
analysis of Prof. Robert Lustig (Fat Chance
Hudson Street Press,
2013) on the traditional Japanese diet
(187-88) strongly supports his position that carbohydrates are fine if they
aren’t highly processed and as long as sugars is limited. If the carbs
are highly refined (as with
white rice of the Japanese) then sugar including fruits needs to be is severely
limited. “The traditional Japanese diet
is polished rice (lots of carbohydrates), a little fish, some fermented
soybeans [high salt],
and lots of vegetables…. Even though it is high in carbs,
the traditional Japanese diet works for four reasons: First, there is virtually
no sugar (15 grams
per day) to promote insulin resistance, or fructose for glycation. Second, the
insulin rise caused by the
glucose in the rice is gradual because of the slowed absorption from the fiber
in their vegetables. Third, the fish is
high in omega-3 fatty acids, a powerful anti-inflammatory agent. Four, their
diet is high in micronutrients
and antioxidants. With their traditional
diet, they have among the industrial nations the lowest rate of cardiovascular
disease and obesity. “Using fiber, as
the antidote to carbohydrates, is the salvation of many a successful diet” (see
chapter 12). I would add that seasonal
variation in fruits, permits the body to repair the damage fructose does to the
liver and other organs, fasting during famines, periods of low carbs all
contribute to those on a native diet having a low incidence of cancer, diabetes
and Alzheimer’s disease.
